1-12oz. firm tofu, organic or regular -
cut in small cubes
1 tablespoon olive oil
1/2 lb. broccoli florets
5whole mushrooms cut in quarters
1red pepper cut in thick slices
5oz. fresh spinach cut up
8oz can of cannellini beans - drained
sprinkle of salt and black pepper or red hot
pepper to taste
1 cup of whole wheat couscous cooked according to pkg. and set
Cooking Directions: In a pan place olive oil
and red pepper
simmer for 5 min. on medium heat -
add mushrooms and broccoli
cook 5 more minutes - add tofu, salt
and pepper - stir lightly.
Add spinach on top and then
cannellini beans. Cover and cook for
5 minutes. Let sit for 10 minutes before
serving over couscous.
