1-12oz. firm tofu, organic or regular -

cut in small cubes
1 tablespoon olive oil
1/2 lb. broccoli florets
5whole mushrooms cut in quarters
1red pepper cut in thick slices
5oz. fresh spinach cut up
8oz can of cannellini beans - drained
sprinkle of salt and black pepper or red hot

pepper to taste
1 cup of whole wheat couscous cooked according to pkg. and set
Cooking Directions: In a pan place olive oil

and red pepper
simmer for 5 min. on medium heat -

add mushrooms and broccoli
cook 5 more minutes - add tofu, salt

and pepper - stir lightly.
Add spinach on top and then

cannellini beans. Cover and cook for
5 minutes. Let sit for 10 minutes before

serving over couscous.

per serving: Calories 439, fat 20 grams,

carbs 64 grams,protein 26 grams.





Spread two tablespoons of fat-free refried beans on a whole-wheat tortilla. Top with four scrambled egg whites. Add one tablespoon chopped onion, 1 slice fat-free American or cheddar cheese, and two tablespoons of low-fat sour-cream. Throw on two tablespoons of hot salsa roll and enjoy. Serve with 12oz. glass of orange juice mixed with one scoop of MET-Rx Protein Plus Vanilla Butter Cream.
